Tom's world famous hot salsa
One large can of diced tomatoes
2 raw jalapeno peppers
4 pickled jalapeno peppers
1/4 onion
1 clove fresh garlic
1/4 stalk celery
1 fresh tomato
Dice tomato, onion, celery, garlic and jalapenos as fine as you prefer. Mix with the can of diced tomatoes and season to taste with salt, black pepper and cayenne pepper.
I like it chunky and hot.
Serve with corn or flour chips, or put it on anything. Usually enough for one meal.
Tom's world famous soft taco/burrito
4 lbs ground chuck
1 onion
1lb colby/jack cheese
2 cloves fresh garlic
1 cucumber
1 small bunch of green onions
2 fresh tomato's
1 package corn tortillas (10-12)
1 package flour tortillas (10-12)
Cook ground chuck, diced garlic and 1 diced onion in skillet while you are dicing cucumber, green onions and tomato's. Chop green onions and grate the cheese. Put all these ingredients into separate serving bowls. Remove cooked beef from heat and prepare the tortillas last. Flour tortillas can be heated in the oven or a micro wave. The corn tortillas can be heated in a skillet with a little oil until soft, and then drained with a paper towel between each cooked tortilla. Don't overcook the tortillas or you will have to make chulupas. (tostados)
Cover and serve the tortillas as hot as possible, letting each person "roll their own" using any or all of the separate ingredients (plus hot sauce). Be careful not to load em up too fat or they wont roll. Serves 4-6
